Gum arabic is a natural gum that was initially made from the hardened sap of two species of the Acacia sensu lato tree: Senegalia senegal and Vachellia seyal. It is also known as sudani gum, acacia gum, Arabic gum, gum acacia, Senegal gum, and Indian gum. Legally speaking, "gum arabic" does not denote a specific plant source. Commercial harvesting of the gum occurs primarily in Sudan (80%) and the Sahel region, from Senegal to Somalia. At least as early as the ninth century, the term gum Arabic was in use in the Middle East. Gum Arabic first arrived in Europe through Arabic ports, keeping its original name.


Polysaccharides and glycoproteins in gum arabic give it the qualities of a glue and binder that humans may eat. Where toxicity is not a concern, other materials have taken its place since gum arabic's chemical composition is unpredictable and varies greatly. The syrup for soft drinks and "hard" gummy candies like gumdrops, marshmallows, and M & M's chocolate candies still contains it. It is used by painters as the standard binder in watercolour paint, in photography for gum printing, and in pyrotechnic compositions. The gum is also used in pharmaceutical products and cosmetics as a binder, emulsifier, suspending agent, and viscosity-increasing agent.
